Beef Bolognese

Ingredients
  

2 tbsp olive oil
1 onion, finely diced
1 carrot, finely diced
1 celery stalk, finely diced
1 1/2 lbs ground beef
3 cloves garlic, minced
3 tbsp tomato paste
1/2 cup red wine, optional
28 oz crushed tomatoes
1 cup beef broth
1 tsp Italian seasoning
1 bay leaf
1/2 cup milk or heavy cream
grated parmesan, for serving
cooked tagliatelle or pappardelle, for serving

Method
 

Step 1: Cook the diced onion, carrot, and celery in olive oil until softened, about 8 minutes.
    Step 2: Add the ground beef and cook until browned.
      Step 3: Stir in garlic and tomato paste, cooking 1 to 2 minutes.
        Step 4: Deglaze with wine, if using, and simmer until reduced.
          Step 5: Add crushed tomatoes, broth, Italian seasoning, and bay leaf.
            Step 6: Simmer uncovered on low for 1.5 to 2 hours, stirring occasionally.
              Tip: Let it simmer the full time for the deepest flavor.
                Step 7: Stir in milk or cream during the last 10 minutes.
                  Step 8: Toss with pasta and top with parmesan.

                    Notes

                    This beef bolognese recipe tastes even better the next day and freezes beautifully — consider doubling the batch.
