Bloomin' Potatoes

Thinly sliced, fanned russet potatoes baked until crispy-edged, then loaded with cheese, bacon, and sour cream.

Ingredients
  

4 large russet potatoes
3 tbsp olive oil
1 tbsp ranch seasoning, or garlic powder, paprika, salt, and pepper
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
1/2 cup sour cream
2 tbsp chopped chives

Equipment

  • 1 Baking sheet
  • 1 Sharp knife

Method
 

Step 1: Preheat the oven to 400°F (200°C).
    Step 2: Slice each potato into thin slices about 3/4 of the way through, keeping the bottom intact.
      Tip: Use chopsticks alongside the potato as a slicing guide.
        Step 3: Drizzle with olive oil and season, working the seasoning between the slices.
          Step 4: Bake for 45 to 50 minutes, until tender with crispy edges.
            Step 5: Sprinkle cheddar over and between the slices, then bake 5 to 8 minutes more, until melted.
              Step 6: Top with bacon, sour cream, and chives before serving.

                Notes

                Use chopsticks or spoon handles alongside the potato while slicing to prevent cutting all the way through.
